Cayenne Sweet Potato Fries

Gluten free, dairy free, vegan friendly and free of refined sugars. This recipe is perfect for those who want to add a bit of a spicy kick to their meals! The coconut oil adds a bit of sweetness while the cayenne pepper provides the kick! You can adjust the amount of cayenne pepper to suit your taste buds!

SERVES: 1-2 PREP: 10 MINS COOK: 30-40 MINS

INGREDIENTS:

· 1 medium sweet potato

· 1 tbsp. of coconut oil

· ~1/2 tps. of chili powder

· ~1/2 tps. of garlic powder

· ~1/2 tps. of cayenne pepper

· Salt

· Pepper

METHOD:

1) To start with, wash and peel the sweet potato (I personally don’t mind the peel, so I typically just wash the potato.

2) Preheat the oven to 300° F.

3) Cut potato into small fry sized slices.

4) Melt coconut in the microwave and spread onto to a flat backing sheet pan.

5) Place fry pieces onto the sheet pan and mix with the coconut oil until the pieces are coated.

6) Add chili powder, garlic powder, cayenne pepper, and a dash of salt and pepper to the fries.

7) Lightly stir ingredients and fries together using a spatula.

8) Put pan into the oven. Set the timer for 30 mins.

9) Stir fries every 5-10 mins.

10) Fries are done when they are soft. Let cook for longer if need be (I take a fork a stick into one of the fries. If it goes in easy, then they are done!)

11) Take the pan out and let them cool for about 5 mins.

12) Transfer to your dish of choice! Enjoy!
